This is what happens when you have a dinner idea already in motion when you realize it’s cinco de Mayo and flip the script to make it a little Mexican like. 
 

I present you chicken bacon ranch quesadilla’s (the pierogis where cooked and saved for another day)

Potato's with chopped up onions.  Mixed veggies. Peppers, onion, zucchini, and shrooms.  

Blu cheese bacon burgers with a little smoked Gouda on top.  

So, good.

First time doing fried rice. It didn't have a lot of flavor. I used jasmine, melted half a stick of butter in it. Also put stir fry sauce on, I guess not enough!

Haven't tried fried rice yet, so I can't comment on flavors, but it looks good.  Maybe some chicken stock?

That's a good idea. I refried it tonight and hit it with some stir fry sauce, it was good not great.

Coconut aminos and plenty of sesame oil helps the flavor. Using left over rice gives a better texture than freshly cooked.

I've always seen "day old rice" in recipes. I think you want drier rice, it's a moisture that makes a big difference.

Small sample of the food cooked during our camping trip. I didn’t take nearly as many pictures as I normally do. We had no cell service so for the most part I never had my phone on me and I wasn’t going to go grab it just to take a picture.
